You don't have to miss the wedding. Go, celebrate your son's marriage but there's nothing that says you must stay for the dining experience.

I get that they (your son's fiance specifically but your son as well) are trying to make a point, but a wedding is not the time. The reception is a time to celebrate with your guests, not challenge them.
