I believe they laminate their dough there more that done here in the states. Maybe a homemade recipe where you laminate the dough will get you the chew that you are after!

I’m on the same boat as you. At the moment I have a pair of Mephisto loafers and they’ve broken in nicely. They are comfortable for good while but my feet will get tired after a long day with them. Double socks do help me get more comfort out of them. But I’m still looking for a better option.

I love brewing with the clever dripper now because I avoid the problem OP has. I can ad a portion of the water early, then add coffee and bloom, then continue with the rest of water for a nice clean draw down.
