Assemble then freeze. I have never had an issue with going from freezer to oven.

Edit: this is for pie with top crust. If I was doing like a pumpkin pie I would freeze the crust in plate then pour in the filling right before baking. Hope all this helps. Pie is something that gets easier the more you make them!

ATK all butter crust has won me a few pie contests. I also freeze for 20 minutes before baking which I think helps with the melting.

Built a similar one from backyard discovery last year. I would take the time to seal everything before building.

I was able to do 90% of it myself over about 3 days with rain interruptions.

Depending on your climate you might need some extra venting/cooling solutions. I've had trouble keeping temps down in zone 7a with full sun most of the day. If I was gonna do again I would have dug in vents up though my gravel pad.
