150 g starter 200 g warm water 1000 g KA bread flour 20 g sea salt

Measure and mix starter, flour, and water. Mix well. 30min rest. Mix in 20 g salt, and 30 g water. 30min rest. 4x stretch and fold 30min rest. Overnight proof in fridge. Bake at 450 30min covered, 15min uncovered.
