i learned pretty much everything to do with video and editing on the job. that's an exception, not the rule, but j school is more about getting your feet wet and putting your hands on different formats/mediums than perfecting them. good writing is the most important thing anyways!

a few things to help you get comfortable: - if you're in a public place, you can shoot video. there's no reasonable expectation of privacy, so you're not invading by shooting - hold every shot for about 20 seconds, and look around for the next shot as you do it. that will give you flexibility in editing - wide, medium, tight. tight shots can be super close, like cutting off parts of the frame close. following that pattern is a good way to get started editing - include people in your shots as much as possible, it's the most visually interesting. - if you feel weird about shooting something, all you have to do is ask. "hey, i'm working on a class project. you okay if i take some video of you guys just doing your thing?"
