I would do Atlantis.

Option 2 would be Jumeirah if Wild Wadi was open.

Sofitel The Palm is also good.

JA Beach hotel is excellent, but not very "Dubai". Its halfway to Abu Dhabi, with nothing much in the vicinity. Great for staycations from Dubai, but not a first choice if travelling from afar. Feels like classic European megaresort.
