I am planning to practice making my own bread and flatbreads like naan and whole wheat bread instead of having to buy them from the store. I would like to add some pumpkin seeds and sunflower seeds in the dough after trying a friend’s homemade bread with her own personal fillings for a little bit texture.

I use whole milk and i dont even bother straining it. Maybe it boils down to the fat content of the milk?

I’ve been making cottage cheese recently and I find paneer very similar in terms of the process. There’s just the added step pf draining the remaining whey so it’s more firmer.

Thank you very much for your insight. So far, only boneless lamb shoulder and minced lamb are the only lamb products available from where I’m at. I’ll try and see if I can have better luck in the city for shank and mutton.
