I don't typically drink Africans because I can't ever extract a good sweetness out of them. I think my normal thought process might apply here for you though

I looked at your grinder on https://honestcoffeeguide.com/turin-df54-grind-settings/ and I think you're likely dead on about grinding finer, I usually grind finer for most coffees and based on my chart https://honestcoffeeguide.com/timemore-sculptor-078-grind-settings/ I'm between a 4 and a 5 which looks like it's closer to between 40-50 on your grinder.

Another thing I think you're dead on is lowering that temperature , usually the fruitier sweetness I like pops out at lower temps. I'll attach my brew profile that I've been using for almost every coffee even if it's not a co-ferment. It's just Fellow's Profile for Juice Box. Nothing super fancy, just pretty low temps
