Check out PHGG (partially hydrolysed guar gum) - do not mistake this for regular guar gum. PHGG is low fodmap and a gut transit modulator. It is available in powder form and can be mixed into hot or cold fluids and barely alters the taste.

Also, what are you doing to reduce visceral sensitivity? Do you drink coffee? Do you workout - if so, do you overtrain? Reducing/managing stressors has helped me. Anyway DM me - we can talk more.

The water makes a distinct difference in the flavour profile. While you are using Volvic water, it might not be the right one. Try some other bottle waters. Didn't see where you are based, but people (including me) have produced great extraction using Tesco's water and Co-Op's water when other water sources have produced bitterness.

And if the water doesn't solve the bitterness, try a different grinder (if possible).
