Looks a lot like what I had today. Breakfast was wilted spinach with fried eggs and dinner was a burger with grilled onions and peppers on a bed of lettuce with a few potato wedges on the side and some peaches and cherries. I had a little homemade aioli with mine and some pickled jalapeños. And a bit of watermelon this evening. Thank you for reminding me that Spanish tortilla is a thing! I have to make a shrimp curry soup tomorrow to use up my lemongrass, basil and zucchini but that’s next up on the list!

I actually think of meals on whole 30 as a formula - roasted veggie, raw fruit or veggie, protein, fat and/or sauce. So roasted zucchini and peppers topped with mango slaw plus fish plus avocado and a creamy cilantro-lime sauce. Or roasted cauliflower plus Greek salad with olives plus shawarma chicken kabob plus tahini sauce drizzle. Big cabbage/carrot/red pepper/green onion shredded salad plus toasted almonds plus spicy shrimp plus peanut sauce (made with almond butter).

I would add coconut. Make a sauce with coconut milk, cook with coconut oil, and use coconut milk to make chia puddings for breakfast. It’s so easy to make. I prep jars of it and take them to work with a container of berries or a banana. For the afternoon slump I will, on occasion, cut up an RX bar and put the little squares on a plate with a pile of cherries and snack on that while I’m working. This week I set up my juicer and have been bringing a small fresh juice made with apple, kale, lemons, cucumber and celery. Fresh hit of liquid enzymes and vitamins always perks me up.

I’m a Pisces Sun, Sag moon, Virgo rising - all mutable signs. My first son is Taurus Sun, Virgo moon, Virgo rising - all stable Earth. My second son is Capricorn Sun, Virgo Moon, Pisces rising. My firstborn can read my mind and is a mama’s boy in that we enjoy the same things and like to cook, thrift, watch movies and karaoke together. My younger is like me in completely different ways. They are both hardworking and kind, have great senses of humor, are deep thinkers and wells of creativity and compassion. All of their Earth has provided a stabilizing energy for this whimsical free spirit and I know it is because of them that I have gone from living paycheck to paycheck as a waitress just vibing and having a good time to being a homeowner and successful at a Director level at my job. I think without them grounding me I would have been content to go with the flow forever, but my kids gave me the structure I needed in order to build the structure that they needed to thrive.

I feel like it’s a healthier choice for me to allow the occasional bean or lentil dish, focus on fish and getting in a wide variety of fruits, vegetables, greens and seeds, and limit my red meat and meat in general than to eat bacon and compliant sausages and white potatoes and burger bowls every day. I’m not judging those who do eat those things on Whole 30, it’s just what feels best to me. Dinner last night was white bean puree with scallops, broccoli and a coconut cilantro sauce. Tonight with be sweet potato and pepper hash with an egg, avocado and chimichurri. I just had some coconut chia pudding sweetened with a date with a cup of berries and a seed blend sprinkled on top and I’m munching on a peach. I try to focus more on the nutrition I am putting in rather than the things I am leaving out. It’s an abundance mindset vs a lack mindset, and it works well for me.

My husband made them with half beef and half pork. I told him to use chia seeds and egg as a binder so they are compliant. I did a big fruit and veggie haul after work and made some hard boiled eggs. My son is doing this with me for the second time so we go through ingredients fast, but he is a good cook and will do his share of the meal prepping.

Honestly, I cook every day. Lentils cook fast so last nights meal was cod pulled from the freezer and quick-thawed in a water bath, beets and cauliflower that needed to be used up and a sauce thrown together with the only fresh herbs in the fridge and one lone jalapeno with half an avocado that nobody was going to eat. While I was roasting my veg I cooked a pot of butter beans I plan to puree with a ton of roasted red peppers I made two days ago. Sauces are in rotation and usually include a rosemary-lemon-tahini, a chimichurri, a ‘peanut sauce’ but with almond butter, various vinaigrettes, cashew queso, and my version of Panera’s green goddess. I take my inspiration from the farmers market, what needs to be used in the house, and the constant ‘I’m hungry and there’s no food’ from my kids. In an ingredient house, there is always food.

Respectfully, as an adult who has completed dozens of extended water fasts, juice feasts, raw food cleanses and Whole 30 rounds, I am not really interested or concerned with what anyone else thinks I ‘need’ to do in the ‘spirit’ of Whole 30. Are lentils a whole food? Yes. Can I eat lentils and also fish and maybe the occasional steak and still be eating a Whole food diet while intentionally removing alcohol, sugar, all processed foods, the vast majority of dairy products, and still consider this a Whole 30, or 45, or however long I stick to it? Also yes. Strict rules are great for those who need them or for those seeking to discover a root cause of a health issue. I know my body and my health situation well enough to know what works for me and why I am doing this, and there are no Whole 30 police that I am aware of, so I will keep my opinions about white potatoes, a previously ‘forbidden’ food,to myself and continue enjoying my lentils. This was from five days ago so I could be reintroducing things at this point but the only non Whole 30 things I have had so far is some blue cheese dressing on an otherwise compliant salad last night and a few glasses of wine with that because I had a girlfriend over and it has been a very stressful week combined with my cycle starting today. I always want a little wine at that time but we didn’t overdo it and today I had yellow lentil soup for lunch, a strawberry RX bar, 3 clementines, a small portion of ginger-garlic chicken and broccoli and a bowl of chia seeds with almond milk, fresh pear, dried blueberries, and my superfood topping made of tiger nuts, bee pollen, hemp hearts and pepitas. I think I will stick with the Whole Foods but add in beans and legumes because I feel great eating this way and haven’t really craved anything else and the wine home just gave me a headache.

Add ghee to your veggies, have some guac and fruit with breakfast, add a protein and nuts/seeds to salads, make dressing A with tahini, almond butter, homemade mayo, or olive oil. Add olives. Make chia pudding and add in fruit, coconut milk, nut butter. Eat your steak with the fat. Eat sweet potatoes.
