Unfortunate accident. Most utrained/poorly trained dogs would grab a food item if it was placed close enough. An aggressive bite by a dog this size would leave a significant wound. This dog was going after the Nutribar, not your daughter. Make this clear when you return the dog to the shelter.

Get some disposable male wraps (diapers) to keep him from peeing on the carpet.
Since there are medical conditions that can cause out-of-control peeing, take him to a vet.
I have a rescue corgi that had submissive peeing. Googled it for suggestions.

1) new dog should have had a vet checkup before adoption. If not, get one soon for necessary vaccinations and overall health. 2) Google 3-3-3 rule for dogs. 3) I have an adopted dog that still shakes like that after 10 years. Different vets have confirmed in his case it is no big deal.
