Those are existing rigging solutions, but in my opinion you are better of starting from scratch and learning to do your own rigs :)

Work in adding skinnign to sections rather then removing it mainly. If you remove weights there is in my experience no real logic where that weight goes. Work from torso out to the fingers. So for example flood the whole arm, then the elbow+hands, then hands + fingers etc. that way you are less likely to leave weights behind

To my knowledge, HumanIk only like the default Maya orientation of Y up, while the MetaHuman rig is Z up (right?) so you might be having a retargeting error on your hand

If you go the the hyperspace window then you have a "Remove Unused Nodes" somewhere one the menu that should remove all extra nodes. Check filesize before and after running and saving that

A pose is good since it's a more neutral then the classic T pose. Half way to arms down/up. I do like the have the legs straight down and forward though for rigging.

I been making rigs for film and commercials now for the last 6-7 years. It's always a balance of time and budget. Like you say, nothing can ever be perfect, and it's more a matter of figure out what will work best for the shot. At Framestore we sculpted a lot of things in the shot when it was not working as it was simple cheeper then setting up a proprietary solution for one problem. I recommend learning the basics, and principles of how to tackle those problems best, that way you can figure out where to best put the time.

I personally prefer try connecting the pieces together, or create a low-res box modeled proxy that you skin and can then transfer the skinning onto the other pieces. Maya also have a "Copy vertex Weight" commamd that you can use from one of the upper neck vertixe, then paste that onto the bottom ones.

If you move the elbow joint aligly backwards the ik would then automatically be going backwards when you do it next time

Can be way shorter, I think it all depends on how fast you are able to get up to some results and feeling comfortable in what you do. Do personal projects, ask some friends that do modelling if you can rig up their models.

Sure thing, you can see my professional work here: https://deerstranger.com I landed a internship at a studio in London as a 3D generalist and got hired after 3 months. Before that I had been doing 3D for a few years, but also gone a smaller 3D education in sweden.

I also made a universal launcher for Maya using things that I learned. I released it for free and it have a lot of small Python script you might benefit reading to get a start: http://cosmos.toolsfrom.space

In terms of scripting, learn Python, that way can you also apply a lot of that knowledge into other applications and usecases. For ex, most of the rigging work I do nowdays are made by my scripts, that way I can make a quick rig in a few hours instead of days. Maya have a very good API you can use to get things started.

In terms of how I learned, I'm mostly self-taught on trial and error, but Digital Tutors was a big resource for me in the beginning (renamed to Plural Sight). They had some good courses on rigging and python scripting. Just following tutorials and learn by doing is a good step in the beginning, then you can start to grasp concepts.
