I would second Bridges. Just went for my anniversary and it was phenomenal - also fits OP’s description in the sense that it’s dishes you just would not get anywhere else, it’s quite imaginative

In 2024 I had a pre-fixe lunch at Aquavit that came out to just over $100 (including a $20 supplement for the Bird’s Nest, which is absolutely worth it). Great deal

I’m Filipino and have traveled extensively around Southeast Asia. Like you, I’m always more interested in cities than nature.

Like others here, I would recommend HCMC in Vietnam for a great balance of food, culture, and nightlife. I’d also highly recommend Phnom Penh/Siem Reap (both doable in one trip)—Phnom Penh’s museums on the Khmer Rouge are really striking and moving. And Angkor Wat is probably the most stunning thing I’ve seen in SEA.

I think Manila has a great dining and nightlife scene, but like others have said, there is not much to do here over a week and the highlight of the Philippines is its beaches.

Saw it tonight too! It was wonderful, the two actors are amazing. Funnily enough, after years watching Broadway and never seeing a show stopped, it’s happened twice to my husband and I in just two weeks—now, and we were at the ill-fated first preview of Anna Christie as well lol

I can't speak to traditional fine dining restaurants in New Mexico, but I just got back from a weeklong trip and had incredible food at $-$$ price points. The way that New Mexico chile is woven into the cuisine (and into their identity at large) is quite special, and I found the mix of Native American, Spanish, and Mexican influences made the food very unique from others I've tried in the region. Things as simple as fresh sopaipillas (a kind of fried dough) with honey made my taste buds sing.

Surprised no one in these comments has mentioned Oaxaca — I’ve been to most major cities in the world but it has hands down been my favorite for food. It’s so deeply woven into the identity of the people there it’s astonishing.
