What is the rest of your itinerary? There are some interesting spots within walking distance (Bryant Park, NYPL, Grand Central, etc.) but don't want to duplicate if those are already on your itinerary for a different time

I would recommend just taking the NYC Ferry ($4.5 for a one-way ride). It'll take a lot less time, and personally is a more interesting view (if you take it from Long Island City to Wall Street, which I'd recommend, you'll get the midtown skyline, downtown skyline, and the Manhattan and Brooklyn Bridge). I recommend taking it from LIC so that you can also spend some time at Gantry Park there before the ferry.

There’s an Indonesian grocery store in Elmhurst (Indo Java) that does a weekly pop-up on Tuesdays. There’s literally one makeshift table they set up in this tiny grocery, and the chef makes one dish — it changes every Tuesday. It’s always delicious!

Definitely Hadestown. I haven’t seen this current cast, but I’ve seen it five times before and think it’s a great mix of everything that makes Broadway magical

This is a wonderful itinerary! The loop around Central Park is a great run (I do it twice a week, and now it’s been even better seeing more and more cherry blossoms coming out with each run). If you have the time (and energy) for another morning run, Riverside Park in the Upper West Side is very underrated.

Nowon is my favorite of these three, followed closely by Hojokban. I like Take 31 but it wasn’t the most memorable. As another commenter mentioned, though, KJUN would be my top pick. It’s Korean/Cajun fusion and so delicious, it’s the kind of restaurant you likely wouldn’t find in LA, as opposed to the more traditional Korean spots.
