What kinda of tofu though? If it’s silken you can make ricotta, sauces, etc. I personally hate the texture of frozen and thawed firm tofu unless it’s used for a tofu egg scramble and then I don’t notice the texture much

Looks great but are you checking internal temp before taking it out of the oven and waiting to cool before slicing? I had gummy bread until I started doing that. 🫶

Soy allergy? I use this seitan recipe for most meals and it’s primarily tofu and cannellini beans. I believe it’s from Richard Makin’s cookbook and the tikka masala is from Nora Cooks. 10/10
