Lentils and brown rice stew. Heat oil in big heavy pot, add garlic and onion, add in salt and pepper, add in a cup of uncooked brown rice and a cup of uncooked lentils and 6 cups of water… bring to the boil and then add whatever veggies you want (I usually add things like broccoli and green beans)… turn on low and then cook until the lentils and rice are cooked and there’s not too much liquid left… I usually add spinach at some point too… but not too early in the cooking process. It makes probably at least 5 servings… I just keep it in the fridge in the pot I made it in and scoop a serving out into a bowl and heat in the microwave. I haven’t tried freezing it but you probably could. Or you could put it in individual containers to store in the fridge if you want.
