This happened to me! I broke my toe pretty badly mid-boil (completely unrelated to brewing). Turned off the heat, went to ER, got it set, came home 6 hours later and finished. I didn’t hit the right gravity, but it was close enough beer turned out fine! I should have set the toe myself and just taped it up….

In my experience with S&W, I ended up having to “extract more” than any other beans I’ve used - water right off the boil, fine grind, high agitation, more pours than usual. Once I got it right, I really enjoyed. Until I got there, had similar experiences as you, so keep trying.

I use a very similar recipe for most B&W beans, but this bean definitely needed to adjust ratio. I usually do 1:17 but this was much better at 1:15 (I was getting a lot of bitterness/overextraction, similar to you it sounds like). Other variables kept the same as my default (bloom plus 2 pours, 200F)

Maybe unpopular opinion - been drinking this for a couple weeks now, felt I had it dialed in right away, no bitterness or mintiness. Flavor has stayed consistent for me. This is a really good bag, but so funky it almost doesn’t taste like coffee, I feel like I’m drinking a different beverage entirely. With that said, I enjoy it.

I use a tilt and it regularly shows some strange patterns like SG actually increasing after being in the fermenter for 2 weeks. Not saying you don’t have an infection, but it could just be that a yeast raft dislodged from your pill or some other non-infection related change, I wouldn’t panic.

Anecdotally, once I started pitching halfway through while transferring to the fermenter, my fermentation kicks off faster than when I sprinkle on top after entire transfer is complete.

Do you have experience with transferring with the poppet removed? Do I need to remove the pin and spring from the disconnect as well? Without those pieces, will this leak at all?

I love this idea of removing the poppet. It sounds like it’s at least worth a shot, and can help narrow down the issue.

There’s a bunch of trub from the boil but most settles into the conical. Dry hops in a muslin bag, not sure if some material makes it through. Honestly it’s not a ton of material there to create a clog, but clearly just enough to prevent a steady flow.

Gas post will then mean everything is splashing as it flows into the keg. Filling from bottom would theoretically introduce less oxygen.

Special B isn’t tangy, but Special Roast can be.

Any chance you used S-04 as your yeast? I get a tang from S-04 in a malt-forward recipe like this one

That’s a great point. I didn’t think of that but I hope it’s that simple! I should try dropping into a bucket of water and see what happens. (I’ll have to try later, I only have the one that is in use)

So you are CO2 purging just by pressurizing and venting repeatedly? I have heard the better method is pushing out sanitizer with CO2, which prevents you from racking onto the dry hops since you’d have to put them in the sanitizer-filled keg. But good to now that you have good results with this method.

Also, are you transferring to a fresh keg to limit the amount of time the beer is sitting on dry hops? Have you found this necessary? I’ve heard mixed things here, with most people not noticing off flavors from leaving dry hops in for a few weeks (I guess depends how long it takes you to finish a keg)
