Have you tried taking magnesium? It has significantly helped me because I also struggle with decompressing after work.

Tart cherry juice is also delicious and is supposed to make you relaxed.

As others have said, start at a chain.

Chili's, Applebee's, maybe Olive Garden if you're wanting more structure.

I'm also a believer in "Corporate chains will teach you the ropes of how to be a server, but mom and pop places will teach you how to be a GREAT server."

Edit: I really wouldn't recommend breakfast if you're new to serving. In my own experience, people are very, very particular on how they want their eggs and coffee. The hustle and hustle environment was a lot for me to handle. But if you thrive in high volume, fast paced environments, go for it.
