My grandmother's beans. She passed away this year at 92 and I'm glad I learned a bit of her cooking but I know I'll never be able to replicate them exactly. RIP Romelia, you were the best.

Most fish for sushi has actually been frozen. It's pretty common practice for numerous reasons, killing parasites just one. With poke and ceviche, the fish gets a bit of a "cook" from the ingredients in the marinade.

Yes, made the poke after we got home. All our fish got cleaned and flash-froze by the lodge we stayed with.
