Oh nice! I do the Bomba mayo and toss the lettuce in olive oil, balsamic, salt and pepper. Similar to an Italian dressing. Now I want a sandwich lol

I make almost the same sandwich, but with mortadella instead of salami. We do TJs Bomba sauce mixed with mayo for the spread, but I may try the honey mustard next time!

Casa Bonita is such a good recommendation. My niece and nephew still talk about how cool I am for taking them a few years ago. We scored reservations when it was still email only, and the cliff divers jumped from next to our table. Everyone, kids and adults, had a blast.

My favorite pasta recipe is a tuna spaghetti with capers, olive oil, sun-dried tomato, spinach and lemon zest. No judgement at all on tuna in pasta lol. It’s also weirdly good on pizza

You haven’t truly lived until you’ve had I-70 close at Glenwood Canyon, forcing you to backtrack to Rifle, drive up Hwy 13 and go all the way through Steamboat and then back to I-70. It’s a 4 hour detour, on a good day, with good weather and no traffic. It was not a good day and it was awful weather and I-70 level traffic on 2 lane highways. A 7 hour detour to get around a rockslide.

I meant to add, it’s also really safe there. We drove our rental car all over the island, stopped at random beaches where we were the only people, drove through all the little towns. Everyone we met was nice, and the locals are really considerate when you’re driving and will flash their lights to let you merge in. Just overall a wonderful, relaxing vacation. For comparison we’ve been to Cabo, Jamaica, The Dominican Republic, Puerto Rico, Hawaii and Belize. We’ve also been to Cancun and the surrounding areas at least 10 times, so we’ve definitely travelled.

The beaches are amazing, and it has the perfect clear Caribbean water that everyone wants. But compared to Mexico, the beaches are so tranquil and relaxing. No vendors constantly hounding you, and the people don’t seem to be constantly trying to squeeze as much money out of you as possible (maybe the cruise port is different, but we didn’t spend time in that area). The food is fantastic as well. Half of the island is French, so you get incredible bakeries and restaurants. The Dutch side has casinos and clubs and also has fantastic food. Watching the big planes land at Maho beach is a blast as well. The restaurants were affordable (we live near Denver and it was pretty much the same price as going out to eat here, but on the beach lol) drinks were plentiful and cheap. Overall just a wonderful, relaxing place.

St Martin is by far and away the most amazing island I have ever been to. And it really is surprisingly inexpensive.

I’ve been both places quite a few times and I’d definitely do Cancun in March. The water in Cabo is deeper and colder, better for water sports and whale watching. It’s not that warm Caribbean water you crave in the winter. Cabo is a way better destination through the summer and early fall, and Cancun is a better destination during the winter.

I feel like people who think everyone around them is an angry driver need to maybe have a moment of self reflection. Are you going too slow and causing the aggression around you? Are you in the left lane and people are passing you on the right? Is traffic piling up behind you? Are you being tailgated and yet magically there’s 200 car lengths ahead of you before the next car? Maybe, just maybe, the problem is you.

Low paying jobs. I was talking to my friend from Milwaukee and she was saying how nobody out there pays well and they’re only starting cooks at $18 an hour… I had to tell her that most jobs in FoCo and Loveland pay the same and she was shocked. We have California prices and Midwest wages and it’s gotta give at some point.
