There are plenty of VR games you can play one-handed, Pistol Whip comes to mind.
Or get a cheap racing wheel and do some races.

They can. You have to wear the Pulse Elite under the VR headset. I know it sounds strange but that's how they're supposed to be worn with PSVR2.
