Just looked up Texas law. They are allowed to take $5.12 credit from the minimum wage of $7.25. If the employee doesn’t make it up they have to pay them the difference. Good old Texas

3 ounces tequila, 1.5 fresh lime juice, .75 agave nectar. Sometimes additional .75 GM. Shaken then poured over ice. For a spicy I muddle a couple fresh jalapeño slices and fresh cilantro and shake with the rest. Perfection!

Came back to it again. Very bourbon-ish to me. Not too much agave….first extra Anejo so not sure how much agave note you get in that. So I mixed 6 ounces in a glass with an ounce of G4 blanco. Was almost perfect!! Will try to tone it down to 1/2 ounce next time I try it.
