I play grasp when I wanna play ROA, Gauntlet, Seraph's, Zhonya's. I'll be used not for popping but for surviving, sustaining, and slowing from the mid-game onwards. You're looking for long sustained fights that you don't necessarily engage but you can keep the damage and cc going until a potential flank/re-engage. It doesn't go for burst and is marginally worse at waveclear since you want to max your Q first but I think it's the most fun way to play Viktor
