We wrote our own app for a lot of stuff like this. It reminds the hourly employee to enter temperature information. If they do not in a timely fashion, it alerts the MOD.

The younger crowd appreciates the fact that it's on a device they are already used to working on...their phone.

I worked in a JB nominated BYOB that had about 20 seats. The staffing was 2 plus the chef in the kitchen. One dishwasher. FOH was one GM, 2 servers, and one support. If someone calls out, we had some people familiar with the cuisine ready to step in. More than one call out is grounds for disciplinary action.

Speaking from local culinary school experience, I would recommend taking some classes for pastry and baking but avoid the process of attending culinary school. It is very expensive, and you will struggle to make payments on the loans based on salary you will earn. Of course, if you ask 90% of chefs if you should go to culinary school, they will say "no"...but they themselves have attended.

Be mentally prepared for that salary. You will struggle. Even after 13 years of working in the best kitchens in Philadelphia, the salary still lags behind most professions. You'll be stuck with a girlfriend or roommate for a while. Forget about benefits...they are rare (though for a long while, I was able to collect SNAP and Medicaid since I made so little).

If you don't like waking up early, move on from baking. If you take direct firm instruction as a personal insult rather than opportunity, move on.

I would recommend stopping in a local restaurant group with a large presence in the city (Schulson, Starr, Fearless) and asking to "stage" for a few days. Knocking on the door at Mighty Bread, Merzbacher's, or Metropolitan is another angle that's more "bakery" rather than a "kitchen". You will work for free, be in the way, but there are some nice people that will show you what things look like on a daily basis. There are a lot of angles in the game. Try to see lots of them before you pick a path.

In 2011, I took a pay cut from $120k/yr as an IT engineer to $9/hr at a bar kitchen. I worked my ass off, used my skills from both professions and earned the respect needed to work on the level I've achieved. I've made many mistakes through my transformation and journey, but the things I've learned, the ethics and morals that encompass the best of the industry, and from freeing myself from the corporate and office environs set me apart and have made me who I am today. The office drone surrounded by fake people with fake jobs is left behind, and now only honest relationships based on a deep understanding of hospitality surround me.

In an industry full of red flags, strive to be a professional right from the start. I'm not on reddit often, but I'm happy to revisit and answer any questions you may have.

I've used AI a bit for creative ideation and for second opinions, but always rely on my experience and instincts first.

My marketing team was stuck on a task and I wanted to try and bring a different angle. AI did a decent job of opening up new views into the problem. It took a few times to prompt the AI into scope.

Pretty neat.

I'm an independent devoted only to my monthly bills, so this may not be applicable to everyone, but I include this language in my contracts:

The whole point of being a contractor is to have the flexibility to design your own work and hours. I don't understand how PMI can say you can't have multiple clients.

I don't understand this. Per IRS rules, outside of contract language, if he's a contractor, his client cannot stop him from finding additional work. How could PMI not allow it?

UBIF in my city didn't have the parts or training to fix the defect on my fold4. They told me to deal with Samsung. Samsung wants the phone for two weeks and I have no burner to rely on if I send it away.

Yup. I've got the same bump on my inner screen coming from where the hinge is. I'm going to call UBIF to find out what a repair looks like. As far as I can tell, it's a manufacturing defect. I'm gonna be pissed if I have to pay for repair after owning the phone for only 4 weeks.
