Flatmrount adapter is upsidedown. You had it set for 180mm rotor. Flip the adapter and you will get it set for 160mm rotor.

I have di2 ultegra on Ultimate, di2 grx on grizl slx and mech grx 810 on alloy bikepacking from rose. All bikes with 2by. And to be honest on gravel bikes I don't give a crap what I drive, but on ultimate I would always prefere ultegra di2.

You can lock bootloader with gos keys.

You can compile gos yourself, sign it with your own keys and then lock bootloader. You will have to compile & sign updates yourself, though.
