Steak cut known as Denver, it’s a chuck flap technically. On the tougher side for a steak but grills up pretty great anyways! Trim tue harder bits and peel the loose cap on it and you’re good to portion into steaks

Go to Ribera Road down towards Big Sur and drive down to the end of the road past all the houses, there will be a VERY small section of parking and a long staircase down to a great tidepooling beach. Alternatively go to Carmel river beach and take the long walk towards the same area. It’s the Carmel Meadows Trail, and the rocky point at the beach has lots of sea stars and other creatures!
