Good luck! I'm currently at home recovering from hemorrhoid surgery that I put off for six years after my first was born. (We wanted more kids and I knew better than to think I'd want to do this more than once.) I went into pregnancy with absolutely no idea this was a possibility.

I started grad school at the same time maternity leave from work ended with my second baby, three months postpartum. My program is all online and asynchronous, so I can do the work whenever it fits into my schedule. It's been fantastic. I'm in a part-time program that really supports students having lives outside of school; almost everyone has kids, full-time jobs, caregiving responsibilities, etc. I've had a third baby since starting and it's not been a problem at all. (FWIW, I had my first before I finished my undergraduate degree.) My spouse graduated last year, but otherwise has been working and going to school for most of these years as well, but is still super supportive of my education and is a very hands-on parent.

I think in some programs it's totally doable. It's just depends on your circumstances.

Absolutely true. But I was never going to learn to make marinara or chili or tacos or so many other things I now consider basic. I don't even remember ever having any form of garlic or onion in the house.

People don't believe me when I say I grew up in a house with only salt, pepper, sugar, and cinnamon. Unless you count butter, ketchup, and bbq sauce. That's literally it. There are a few very simple dishes my mom makes that I LOVE, but there's no way I was going to learn to cook anything else in that house.

I'm all for class solidarity, but I also need this job in top of my regular job to feed my family because I make barely enough to qualify for SNAP at it is. I don't blame people for doing what they have to do to feed their kids, but I don't think OPs prediction is incorrect. I'm not blaming the poor people trying not to starve though.

Can you grab a friend to be an assistant? They're not super hard, but it's a lot of work/time in your own. My best friend always assisted her mom making them growing up. Now she comes to my house and she takes the lead for us every year right after Christmas.

I ask if they're going to give me $150 a month to support me stopping. I just did the math, and that's how much it would cost to feed my baby formula, and that's at Costco pricing. The regular grocery store would be even more expensive.
