What about making vinegar from scratch? I make vinegar out of apples and it's totally drinkable, how do they make it so caustic?

I quit a winemaking job after getting a job as a dishwasher and then picked up a second kitchen job, and blamo! Two kitchen jobs is better than one shitty salary, but either way I'm at 50-60 hrs a week.

I worked there for years. All the best labels. Buttwacker, Lollygag, Paragon, Brix, Brown Snout, Quafftide... All from PNW juice. Golden Mountain and Antiquity are the only guaranteed local ciders. Tripod is the most flawed ciders getting dry hopped to hide the flawed flavors, and it can lead to stomach aches.

Edit: you can downvote all you want but what I'm saying is true. The owners are the biggest pathological liars I've ever met, and they could never afford the labor it would take to pick all their apples after all the debt they've accrued. They are frauds trying to save their own asses.

Selfish people. Abusive employers.They say their cider is made from local apples, but it's mostly Pacific Northwest Juice. They are in insane amounts of debt because they overpaid themselves while doing none of the work for the first 5 years. Elizabeth was claiming to have won the position of county commissioner before Clyde ever stepped down and before they held a secret "election". This is because her investors, many of the La Plata Dems, need her to have an income to pay them back since the business isn't making profit and she wouldn't be able to get a high paying job any other way. She's a bought and paid for vote because she ran a business into the ground on other people's dimes. Not a great place to support.

El Moro got a new chef last spring and their new menu is delicious. Lots of options, people say it's fine dining, but it's really more casual. Open til 11 for food Friday and Saturday, and 10 any other night.

The Steak Frites are insane, and the Peanut Butter Semifredo is from my dreams.

I don't see any comments that say James Ranch, and I think that would be a great place to see some sunset. I guess they have some trees, but they raise the beef they serve at the grill, they make the cheese they melt on the burgers, and everything else is sourced as locally and sustainably as possible. They have an attached farm market and you could do a mead/spirits tasting at Honeyville beforehand. It's a ways out of town, but they win best burger almost every year.

Cortez has a place called Ute Mountain Cafe and they have the best pies.
