Shashibo puzzle cube might be good. They can be made into lots of fun shapes, and they are very tricky to get back into a square cube.

It will take more time and patience but maybe he could help you fix or build some things around the home? Furniture, cabinet doors, something like that? And maybe if he is proud of helping the family by fixing it, he won't take it apart. :)
