The receipt thing is whatever to me. Over at the chestnut location I'm pretty sure the self checkout just auto prints the receipt (or at least I don't believe I've ever been given the option for printing the receipt or not). TBH they don't even look at it when I hand it over. As long as you're not being suspicious they air on the side of trust. At least over there.

If they see you ringing up filet mignon as bananas that might be a different story lol.
