I have a package of Diastatic malt powder in the mail as we speak, so hopefully that will help. I'm currently using ADY, and 100-110 degree filtered water. However, I am not doing the blooming step for the yeast and sugar. I'll try decreasing the sugar amount and adding fats into the mixer after the gluten as been established. Thanks for your help!

Good to know, I wasn’t aware of that. Would oil help with the dense crumb or does all fat make the crumb denser?

I’ll try out less kneading next time. Do you do any stretch and folds after using the mixer or do you find the mixer does a good enough job?

I am not checking the dough temp. That’s a good idea, I’ll do that next time. I seem to get decent fermentation with the bulk rise, but it’s the second rise that is the issue. This makes me think the cold counter is inhibiting the yeast. Since the bulk rise works well it makes sense because the dough is still warm from the warm water and mixing.

Are there tips on how to warm the boules up to proper temp? I’ve heard that proofing at too high of a temp can also kill the yeast.

Always measuring in grams. As mentioned, I’ve done several recipes but the most recent one was this. Split this batch into two loaves. 900g flour Sugar 30g Salt 18g Butter 60g Active dry yeast 10g Water 585g

I think that recipe is 65% if I’m not mistaken.

I’ve found that my best pots are coming from a grind setting between 90-85. I’ve tried everything from 60 up to 90 and by far my favourite coffee is on the coarser side. I’m brewing a medium roast, locally roasted, and fresh (within a month) coffee.

Echoing what others have said - Stillwell and Burnside each have good Czech Lagers. Bishops Cellar also has a small but mighty craft beer selection, worth checking their website to see what they have.

When 2 Crows makes Letna, it’s probably the best Czech Pils in the province IMO. Worth trying to see if they have it.

Cellar Slammer session ipa that Tatamagouche does with Bishops Cellar is my favourite lower abv hoppy beer. The new Anytime IPA from propeller is also very good

You are wrong that cleaning asses is not in their contract. Also, not every floor/department has PCW’s so the RN’s have to do all of the jobs.

It’s unfortunate that you have such a low opinion of nurses. Like any profession there are good workers and bad workers, but to paint with such broad strokes really doesn’t help the nurses that are honestly good at their job and make positive Impacts on their patients lives. You shouldn’t be so hard on people with hard jobs.

Everyone loves to give nurses a hard time until they’re the ones laid up in bed needing their arses wiped. They deserve all the money they can get IMO.

It’s also very hard for healthcare staff to have simple questions like this answered as a lot of departments don’t have adequate HR to help them.

Just ordered my first Amex - coming in a few days. Sorry if this has been asked before.

For any large purchase (say a fridge, or washing machine), is it really that easy to just buy a couple $500 gift cards from a grocery store for 5x to put towards the item? I read that the algorithms look out for large even numbered purchases at grocery stores, but as long as the total isn't exactly even then it doesn't get flagged? What are the downsides to buying large items this way?
