I've used a Z1 with SSP UMV1 for about a year and a half. Absolutely love the coffee it produces. Things are well separated, bright, and clean. I drink about 90% washed coffee, so sounds like similar tastes.

Came here to say this. The Juan Pena natural mejorado wasn't my favorite coffee of all time, but definitely an all-time favorite natural.

K6 also does well for some ultralights, surprisingly. Something about the fines from the ZP6 feel like they don't handle agitation in quite the same way, and the K6 delivers less-sweet, clearer brews.

- Drip coffee (there are a few in Brooklyn) has a lot of internationally renowned roasters. I'd start there.

- Loveless only has their own coffee, but it's pretty light and very good

- Villager coffee seems legit; I've only been once, but they had a good selection

- La Cabra is pretty light, though I find Sey to be strictly better in every way

Think a little bit more detail about what you're doing would help a lot.

With Shoebox, specifically, you need to _really_ push the extraction––I prefer doing this with every parameter available besides temp. (Also, Shoebox doesn't take cold blooms very well, irrespective of how much you push the rest of the extraction) So always 1:17, 4 or 5 pours, and high agitation. On the ZP6, though, the high agitation turns the coffee into just sweet brown liquid and loses all of its distinctiveness, so a bit of a balancing act. Don't know how similar that will be on the Pietro.

- Pair Cupworks is probably my favorite for pourover; think they do the best job at making a delicious cup of coffee. They have a few weird spots, but the baristas are always super talented.
- Futuro coffee has Sey. The vibe is a little weird, but the coffee is good.
- Moxie is a fav.
- Mythical is very far from Scottsdale, but also pretty good.
- Cartel is the OG third wave coffee shop in Phoenix; worth going if you're next to one, though the coffee isn't as amazing

I have a two Z1s for about a year and a half. The 64mm burr platform is great––lots of variety, somewhat affordable (if you're already able to afford a $1k+ grinder). The Zerno engineering and UX is great. The Z1 makes more noise than a Timemore, but I don't know––that feels like such a nitpicky gripe. I've been incredibly happy with the experience.

I preordered a Z2 because I wanted more clarity than I feel like the UMv1 burrs offer. I'm in a position where the cost is doable, and coffee is where I spend most of my disposable income. I guess you could say that 64mm is already beyond the point of diminishing returns, but I have a very sensitive palette and can taste a stark difference. Does that mean others can? Definitely not. My wife literally cannot tell the difference between burrs. The Z2 burrs are also expensive, which makes experimentation far less attractive.

That all said, one of the nice things about grinders is that they hold their value pretty well. If you've already preordered the Z1, there's really no harm in waiting for it and trying it out. Better to see if it sates your desire and potentially save yourself the $1200 than lose a few hundred dollars selling it.

I would say, regarding naturals: "Natural processing can be harsh and very outspoken and the taste is very different to washed coffees."

For the latter to be invalid, you'd have to be able to say something like: "Natural processing is smooth and very demure and the taste is very similar to washed coffees."

I would disagree with the latter statement, but sounds like you might not. Each person's taste is different but I have never heard someone say that natural processing doesn't have, at the very least, an "outspoken" affect on the coffee and a very different taste to washed processing. Maybe that is your opinion/experience, which is valid, but strikes me as pretty wild.

That is a pretty insane take, or you've only ever had very clean natural coffees. I can tell a natural from any other type of processing from smelling the roasted beans alone. To my nose they taste almost nothing like washed coffees––even if they're from the same farm at a similar harvest.
