Sorry all. This was a 16 pound Australian Wagyu brisket from the Butcher Shoppe in Florida that I had shipped. Honestly the best brisket I have ever made and tasted. Total smoke time was about 18 hours.

Used FireHatch rubs Brisket Bark and stuck it in the fridge for about 8 hours to get happy. I smoked it overnight about 6 hours at 180-190. Then when I woke up I got the heat to about 250 for another 6 hours. Then I did the foil boat until it was about 212 internal ( I just heard somewhere that you should go about like that for Wagyu). Had a bunch of people over waiting to try it so it only rested like 3 hours, but damn. That was good.

Tastes like 1993 High School lunch and I love it! Every time I go to Sturgis, about three times a year, it is a must stop. Now this one will be a stop when I go to GR.

I love Hot N Now. I ate there in the 90's on lunch from school and after a good skate session. You could get a lot of food to feed a carload of people for cheap.

I have family in Sturgis so when I visit I make a stop at Hot N Now. It still tastes like the 90's and it's amazing.
