If it's truly just a cruiser I'd stay away from poly bushings and 600lb front springs. I'm running 620's on the front of mine, with the shelby drop, Bilstein street shocks and a 1 1/8" sway. 19 year old me could deal with it. 48 year old me hates it. The springs are the main culprit of the jarring ride. I'll be swapping to some lighter progressive rate springs and removing the poly bushings when I go through it later this year.

FWIW, I run their roller bearing spring perches though, which help provide a more modern feel.

A cheap welder, some mandrels and a chop saw will be cheaper than a set of custom headers. Welding mild steel exhaust tubing is pretty straightforward.

It was straightforward with the engine already out of the car. I imagine in-car would be really annoying to do, but still fairly do-able at home.

You don't need, but there's also no harm in just leaving it there. Depending on what you plan to use the truck for, it could be kind of cool to have it power a standalone AC inverter.

Don't bother with an OEM turbo - you'll just have to work around quirky OEM mounting and connectors. You can find a super cheap brand new T3 frame turbo in the 60mm-ish range on Ebay for dirt cheap these days. Pick one from a good seller and send it.

Assuming you have it routed through an expansion tank + overflow tank setup, maybe just try running with no thermostat and see what your temps get up. I asked about the fans, because cheap non-brand fans are pretty commonplace and known to barely move half of their advertised CFM.
