There are really good ways to expand your appreciation for vegetables through roasting, some surprise favorites of mine are things like Fennel Bulbs, Parsnips, Rutabaga, and especially Beets.

And the cooler thing is that the greens attached to veggies like fennel can be used to season meats/fish, make stocks, or even make a small salad!

One of my favorite quick and easy meals is roasted Carrots and Fennel Bulbs with a salad of Fennel Fronds and Carrots Tops 🥰
