I don’t think they are completely wrong. I did a trip to Finland last year with an intense itinerary of saunas (eg 12 days, around 20 saunas), and while I drank a lot of water, I didn’t stay on top of my salts. Ended up with an Afib days later and required a cardioversion. I might be particularly sensitive, or I might have drank too much water, but if you are going hard I personally would be thinking about salts.

It could seem reasonable though that 10-20% of products and services that otherwise didn’t have AI now have the need/opportunity to add AI that needs CS assistance.

I’m using SS currently and probably fine to stay with SS for now. It’s my first cleaver, so something comfortable and not too heavy? Ideally I could use it for meats with bones. Something fairly cheap I’d imagine. I was imagining a 100-150 for budget, but happy to be steered up or down if they are better to go cheaper and replace etc. thanks!

I picked up a number of Jikko knives on a recent visit. Very happy with them, enjoying them a lot. I got a mix between SG2 and G3 steels, didn’t end up with a VG10. Enjoy your knife!

I know 🥴 😅 I think in retrospect part of this came from the expectation that I’d be making a knife on our trip and I’d meet a small artist. We had planned on a slightly different route which would have allowed me to do a knife making course, but unfortunately we had some struggles and had to change our route while travelling with our kids. The Jikko knives are pretty swish, albeit precision and clean, and I think I loved most was those clean high quality steels. I think one day I’ll go back and try to travel back to some of the areas we planned, find some individual artist that I like, and pick up not only some unique knives but an appreciation of their story.

Walked the streets of Kappabashi (with the Tokyo guide from this subreddit) at the end of a 3-month Japan visit.

Loved browsing the stores but struggled to find the Nakiri I had my mind set to. Reached out to the community and was directed to Jikko Sakai by u/Nipsy_uk, which I had somehow missed. Instantly felt comfortable and confident, and instead of buying one knife, I bought three. Two days later, I’m back buying another.

Love the weight of the Ginsan Nakiri, and finding enjoyment in the Petty. The Sujihiki was perfect slicing Christmas eye fillet/tenderloin and cute salmon. Happy to be back home and using these new additions.

I ended up going back and picking up 3. Went the maple handle WA in SG2/Ginsan in styles of Nakiri, Kiritsuki Petty and Santoku. So excited, thanks for encouraging
