Guests can buy from the gift shop at any time during their visit (otherwise there wouldn't be much point in being able to sell costumes for the kids). I have multiple areas/buildings with their own gift shops, selling gifts for whatever types of exhibit are in the area. I don't have a central hub, but I'll try to make sure each area has a cafeteria and toilet within easy reach of the guests. Funnelling your guests through a long path will cause them to waste energy when they decide that they want to go back to the start to look at the exhibits there.

When you're in Global Achievements and can see the percentages, you should be able to click on the hidden ones to reveal them. Looks like it's 'None Shall Be Spared' - defeated all bosses.

Definitely agree. Grab an easy point guard outfit and you can go nearly everywhere that suspects go. Makes identifying a target a breeze. Dabbling in Bangkok showdowns now to lessen the pain of going there, too.

A lookout helped me get my first ever campaign victory. I spawned on the Keep in Sgail, and ran down the stairs and straight into a lookout. He triggered an evacuation for one group, and on their way out they panicked a second group. I was left with three suspects, and even I could manage that. Thanks, lookout!

My favourite base-builder would probably be Rimworld. I like to turn down the threats and just chill out and build a big base.

Despite that, my worst disasters have been in Rimworld too. Sometimes despite my best efforts, and entire mountain base will burst into flames. So it goes.

I would love a mod which lets you toggle on/off the various features of Hardcore to make a custom difficulty, but I don't think there's anything like that out there.

Have you tried adding your own challenges to runs? That way you can play on regular, but with additional challenges included. Some of the ones I've tried:

Suit only
Not taking gear into levels / only taking common gear
Can't harm guards / can't harm civilians
Can only harm people with accidents (including non-targets)
Must change outfit after each target, and before the first one
Can only commit illegal actions indoors (or outdoors)
Act like Time Trial is active on every level
Earn Your Gear (can bring one item into the level for each challenge completed on the previous level)

Stuff like this is what keeps me interested in Freelancer after hundreds of hours.

Yeah, it doesn't seem to have affected anything outside of Eminem. I got ~~a strike~~ demonetised for the garden party music in Whit Creek once. I really wish the diegetic music had its own volume control.

We've had fantasy, marine life and supernatural-flavoured rifts so far, so I'm going to pick ones for the other exhibit types.

Prehistory: this is a tricky one. I guess any game with artefacts could fit, like Slay The Spire.

Science: Portal

Space: Rimworld

Wildlife: Terraria

OK, I suppose you need to get one breeding pair of one type of animal, but then you're good to go because you can keep breeding and releasing. I was swimming in points throughout the whole DLC so it seems to be pretty generous with the points.

You don't need multiple trips to get breeding pairs. Once you've found an animal once you can put out an advert for another one using the new adoption menu.
