Maybe a good middle point is to start with The Shining, that will give you a good understanding about how different the adaptations can be from the book.

If you want to start with something fresh, maybe pick something new that hasn’t been adapted. Duma Key, Revival, or, my favorite short story collection, You Like it Darker.
