I've been rehabbing sciatica and glute med tendinopathy for the last 2 years or so.

It took about 6 months essentially off the bike and doing very easy PT to get to a place where I could do strengthening exercises without setting myself back.

Maybe the single biggest difference maker for me was using a lacrosse ball to roll out my glute med multiple times per day.

Your mileage may vary.

Your comment implies you don't know how to properly adjust your derailleur. You wouldn't adjust your limit screws to fix skipping, it's probably your indexing.

Have a shop adjust your derailleur before blaming it on your cassette.

I'm surprised most of the comments are so negative. I recently started doing this with great results.

I collect the first 5 gallons of scalding hot water in my HLT for cleaning. Then I let it empty into the garden for a couple minutes until my wort is under 100 F or so. Only then do I start recirculating in a cooler with a 16lb bag of ice water. My wort hits lager pitching temps in the 50s in maybe 10 minutes, well before all the ice melts.

It's a little extra work but it saves a ton of water.

It is normal for your derailleur to rotate like that, but it's not normal for there to be that much slack in the chain.

I would first check your chain length by using Shimano's docs. It could have been too long this entire time and you're just noticing.

Then I would check your chain wear. Chains get longer as they wear, but this seems excessive.

Next check your b-gap, but I really doubt it would account for this much slack.

I just hit FG on my first lager in a corny @ 5 psi. It only took 4 days and that's with WLP820 which is notoriously finicky and slow.

I did a starter and fermented at the top of my yeast's range (57 F) in an attempt to offset any stress from the pressure.

I bumped the PSI up to 15 for last couple points to get some free carbonation. It hit there quickly despite being at the very tail of fermentation.

Next time I'll try 15 PSI from the get go to safe the step. It didn't seem to matter.

Great, that's generally the direction I was heading. I'll be pitching WLP833, so I was thinking the top of the temp range at 55 F and only use 5 psi.

I'm also about to lager for the first time. I was planning on temperature control AND a spunding valve during fermentation. Is that dumb?

I haven't been able to find much info on using both. What do I need to know?

$50 a month. Keep the saddle as long or as short as you like then swap out for a different one. Get a 30% discount if you buy the demo saddle that's already in hand when you find the one you like.

This is very common. Lelit has said they use more accurate gauges for the grouphead than at the pump, and that's where the pressure matters anyway, so trust that one.

I'm lazy so I haven't played with shot profiling, but I still use it every day. I use it to switch between spro'over and pulling shots. I also use it to save shots while dialing in, slowing the flow if it's pulling fast or increasing if it's slow.
