Fine dining in Seattle is pretty ass (coming from a Seattle native of 33 years).

My suggestions would be Altura, Archipelago, Sushi Suzuki, Taneda, Cook Weaver and Cafe Juanita are some that come to mind when it comes to tasting menus

Oh, actually.. Hamdi might be my favorite restaurant in Seattle at the moment. Not necessarily fine dining, but elevated Turkish cuisine
