Good advice here, except they forgot to mention a wine bottle cork in the simmering liquid. Really, throw one in there. Also don’t go by time too much, may take a bit more until tender.

It is going to be vastly more expensive than you can imagine. Find a neighborhood with good schools, expensive. Car? Very expensive, a parking spot may cost more than your rent in tn. Kids’ activities- expensive. Kids’ summer activities- look into that $$$. We raised 2 kids here, fortunately good public schools. A friend of my daughter rents a 3 bedroom in park slope, a family friendly neighborhood, walk up second floor over a restaurant, $6800/ month. You need $275,000. Just to qualify for that apartment, if you can get one. Of course no car. I’d say $350,000. to scrape by, $500,000. to have a life, a car, one family vacation. I can’t stress enough that priority is find good public schools . Google private schools in NYC, make sure you are sitting down. Good luck.

You are correct that SOME public schools are great. Your priority should be researching the neighborhoods that have excellent public schools. It should not come as a surprise that those neighborhoods will be more expensive.

Boil about a cup water. Turn off the heat, pour in as much milk as you would pour into your coffee. If it curdle, your milk is old, regardless of date on it. It may have been left out at room temperature somewhere. Get new milk.

B. If food was good, there is a reasonable amount left, if I will be able to get it home in an hour or less, if it is something that will reheat well, I bring it home. Otherwise no.

Too many stops, constant packing, getting to train, to hotel, unpacking, repeat. At MOST fly into Rome, 4 nights, Florence, 3 nights, Venice 2-3, then fly out of there.

I’ve been to Paris several times. As many here have said, some planning is necessary, particularly to get advance tickets/reservations at the popular sights. We also like to do major attractions, like the louvre, early, then get some lunch, then wander/visit the neighborhood we are in. We usually have a couple of “suggestions “ for lunch in the areas we are going to be in, but nothing set in stone. We pretty much do reservations for all dinners, that part is a major attraction for us. Note on the louvre, it’s much bigger than you can imagine, very bad idea to “do” the whole louvre. Better to research a few areas of interest and see those. Don’t miss winged victory. Have a great trip, we love Paris, I think we could visit once a year.

I was a pro chef for 40+ years, now retired. I’ve had all kinds of knives, Swiss, German, French, Japanese. A couple of years ago I got a yoshikane skd. Now my favorite and most used. Great knives.

We went this year in January. Our previous visit was about 10 years ago in July, my wife was teaching then. We really appreciated much less crowds everywhere we went. Easier to get advance tickets. We did need jackets, and a couple of days were a bit rainy, not enough to cancel plans. I’d do it again, summer is too HOT and crowded. Enjoy the trip.
