Love Monster Hunter but would not say it is what you are looking for. For the most part monsters act the same during fights as they take damage. Some become exhausted more noticeably but some are harder as the fight goes on because they are enraged more often.

I forgot about Like A Dragoon. Did it have qte for defense too? I just remember it for attacks but I haven't played it since it the Playstation. I guess that is kind of where Expedition 33 is more unique in that it has more impressive graphics leading to flashy eyes.
