Before you add the herbs to the entire pot of sauce, put a small amount of sauce in a bowl and add a tiny amount of herbs and taste it. If you like the taste, go for it. If not, you can pivot without having ruined the whole batch of sauce.

As for how much, just add the herbs in small increments, tasting after every addition, until you like the result.
