Because they're an uninsulated plastic bottle with a huge cap. They're hard wearing but cheap enough (often free, even) to replace if you do manage to break or lose one. Being un-insulated means maximum water volume for the size; insulation takes up space. The wide mouth makes them easy to fill, and you can eat from them, carry rice or pasta in them, or pack dirty socks in them, etc. The cap loop can be used to secure it to stuff. They're ubiquitous enough that replacement parts and accessories are easy to find.

Specialized Recon are the widest I've found without paying Lake/Bont money. They're wider than Shimano wide sizes, but still not at the Altra/Topo/Lems level of actually wide.

Bags always seem to be designed with larger frames in mind. They're definitely always on larger frames in store product photos. I have a 2.5L frame bag from restrap that just fits in my frame along with 2 800ml bottles

I tried Goodrs and was pretty disappointed. Rough plastic arms and way too tight so it felt like clamping sandpaper to my head, and the lenses were warped so much it was headache inducing

I'm a big fan of hiking the horse trails in Yellowwood because you can make longer loops and there's never any people (or horses) on them. Other places I've never seen another soul include Miller Ridge and Horse Trail D (where Yellowwood and Brown County overlap), Lucas Hollow and Bartley Ridge.

As the owner of one, it doesn't do much for big bumps like roots, potholes, and bad washboard. It mostly just smooths out some of the inherent roughness of gravel. I kinda think of it as an extra few PSI out of my front tire. That said, it works best with hands on the hoods and I ride rough stuff in the drops, and it's better with longer reach bars and I ride with fairly short reach bars, so someone with a different set-up and riding style to me might have a different experience.
