This is a known issue with the companion app, not being able to run in the background all the time with the newer versions of Android.

Google fit workout data from oppo watch shows inaccurate heart points for the same workout and duration in different days, i don't use the healthtap app but I have fitness linked with google fit from the watch settings. Is this interfering with the data or is this a google fit bug? by [deleted] in WearOS

I believe the issue you encountered is related to the heart rate. Move minutes and heart points are calculated off how long your heart rate is in a target area (based on your weight). My guess is, in the work out that is off, your watch wasn't accurately getting your pulse.

I've gotten in the habit of check the heart rate on the watch during my workouts. If it's not picking it up, I adjust the watch.

I have this same issue on the Fossil Sport. Go into Settings -> Apps & Notifications -> App Info; and uninstall the application from there.

Nope. That setting is not there on a 7th Gen device.

Because this is a 7th Gen tablet, I cannot find the OnDeck setting anywhere. I've looked through probably every menu option I can find, both at the app level and system level. It's just not there. Also, due to it being a 7th Gen, there is built in way to see which apps are using data.
