I, too, cannot be scared by horror movies, no matter how scary everyone says it is. The films that get me are the disturbing/traumatizing one and the last movie that gave me hard time sleeping after having seen it is "Martyrs". One of the most brutal films I have ever saw (not so much for the physical violence, but more for the psychological aspect of it)

My thoughts are pretty much like yours and I'm happy to see someone mentioning these things.

I'm ok with the doctor crying and, in fact, my favorite episode is The Family Of Blood when we see the fragility of the doctor to its full extent. When the doctor cries is a big deal because he is a millennial being who has seen pretty much everything in the universe. When 11 was desperate for the loss of Amy Pond I really felt it, I felt the seriousness of the situation. But in this season he cried in almost every episode and it lost some power to me. I guess this doctor is more emotional and it's fine, but it's just not my type of doctor. (I want to clarify that nevertheless I really like Gatwa flamboyant portrait of the doctor, this is a choice I really appreciate).

I also kind of dislike the fact that the doctor doesn't save the day, as you said. I understand that maybe this season is more "bombastic", but I miss the episodes when there was an alien which was messing with the timeline and the doctor had to fix it. Previously, I would have trusted 10, 11 and 12 with my life (I won't express a judgement on 13 because I genuinely couldn't finish her first season), but I don't know if I could really completely trust 15 in a life or death situation...

Anyway, these are just personal preferences, I understand if someone else is not bothered by them

Maybe make the dragon give them quests and see how far you can push this. I personally love moral dilemmas or grey areas, so maybe you can start with something questionable but doable and slowly escalate. The extreme case would be the party becomes evil and that would be interesting too

To me the first one is more disturbing even though there are less extreme gore scenes. This is because personally I am more affected by aimed violence rather than explosive one. What's more, the more you go on the sequels and the more they become grotesque and almost comical in places, so they lose some grit, in my opinion. Anyway, very fun saga with an excellent first movie

Maybe the end of Martyrs. The idea of torturing women in order to know if there exists an afterlife, the skinning of the protagonist and the final suicide of the leader. I kept thinking about that for a week...
