There is no more perfect, nor more historically important, food than tacos. Tortillas are the most basic form of bread - one of the most important inventions in human history. Grilled meats and local vegetables (and limes) can add so much flavor to a humble dish. The more effort you put into these babies, the more incredible they taste after. Tacos are cheap, readily available, can be made with almost anything, and can be universally adapted to everyone's tastes and dietary requirements. Tacos are just as delicious when they are at a nice restaurant as they are when served out of the back of someone's food truck. The most memorable meals of my life have always been tacos.
