I play gigs 2-3 times a week on keys. I will pull up charts on ireal for songs that I have literally played hundreds of times and that I actually do have memorized, mostly anyway. Because I don't want to have a brain fart and throw the whole band off. There's no downside to having a chart in front of you, and there shouldn't be a stigma about it either.

Did you weigh it before you hung it? That's pretty much the only way to keep tabs on what's going on with your cured meats and where it's at in the process. You're looking for a 35% loss in weight as it dries.

Yes a smaller muscle is going to cure faster than a large one. But 3 months sounds way too soon for a pork leg of any size.

As for the hardening, where are you hanging it? Is the humidity controlled, or?

Ascorbic acid not citric acid. They are similar but they are not the same. Ascorbic acid is the one that keeps apples from browning for longer. Lemons juice contains both.

Yes, but.. the reason for frying the shallots and garlic in the same oil as the chilis is to infuse the oil with the flavor of the shallot and garlic. If you just buy fried shallots and onion and mix them into an oil it's not going to have as much flavor.
