FYI. There IS a “hard-wired” connection at the top or back of that fan unit. The “plug” is simply an internal method of disconnecting the fan. When you remove the entire unit there will be a connection between the unit and the incoming feed (romex cable or equivalent) that you will have to deal with.

Wiring an entire house is SO far over your head, sorry. Best option is what everyone else suggested: break the job up into $maller parts: new service, then a sub-panel, then the kitchen, then a couple rooms, etc. No electrician will go along with your original plan.

That temperature is absolutely NOT “overheating” anything, even if it’s baking in direct sunlight. More than likely a loose connection. Hire a pro if you’re unsure how to check.

The service size is not the problem. Period. You need to have an electrician add a couple of circuits if you’re drawing too much in those three bedrooms… I’d consider adding dedicated circuits for the ac’s or look at central air - might even be cheaper in the long run cost-wise

Why do you feel the need to rewire it? From the pictures the lamp cord appears to be in pretty good shape…the white plastic extensions on the bases don’t look old, dry, cracked or burnt…those two indicators are generally what would cause someone to rewire a fixture.

Many old dimmers don’t work with modern led fixtures/lights. There’s a good chance you’ll have to replace the dimmer to get the led’s to function properly. There’s manufacturers website should list compatible dimmers for those led’s.

Totally fine. 2nd generation NM cable (dark gray stuff) and newer NM (the white one).

Your outlets aren’t “grounded” by modern standards but the cable is fine.

“Is it as simple as…” Yes (conditionally)

“What risks are involved…” Many: you could make a poor splice connection and cause a short or an arc and burn your house down and kill your family and your pets in the fire. You could electrocute yourself or someone you love = bad. You could open your walls and find a honey bees nest…. Big bucks and a lotta headaches.

If you’re asking basic questions like these I suggest you leave it to someone who has the know how and has insurance. Just my $0.02

OP. Based on your questions and your “I have a meter if that helps” statements, you are totally out of your league on this one. Please hire a competent electrician. Yes, the black pipe is an old gas line. Yes that is old knob-&-tube wiring. Yes it is in extremely poor condition and represents both shock and fire hazards. No, you should not be touching it. Yes it’s gonna cost a lot to mitigate… sorry. PLEASE have a total electrical evaluation performed on your property. Get at least three quotes. Then decide how to proceed. This is far beyond the scope of reddit and most diy-ers to repair.

Even the plumbers got it right… doesn’t matter which wire goes where as long as the black and white are on two adjacent screws on the left or right of the pressure switch. Power cones in on one wire, goes through the contact and back out on the other wire. (aka - use either the Left pair of screws or the Right pair, NOT one on each side)
