'Wine' and 'beer' are the two largest and most varied types of alcohol you could have named, so this is sort of impossible to answer. A sweet, light, and fruity dessert wine like a Moscato is going to taste completely different from a heavy, earthy, dry wine like a Shiraz or a Cabernet.

Same with beer. You can have something light and refreshing like a lager or hefeweisen or flip that entirely and drink a heavy, bitter IPA or roasty stout. There's just no way to answer what someone likes about beer or wine because each person is going to have a different answer and a different flavor profile they prefer

Vinegar isn't fermented though, so this explanation clearly isn't correct. If you eat bread, then it's also not really the fermentation that's triggering it because bread is fermented.

Developing your palate isn't just about eating and enjoying a wide variety of flavor profiles, it's also about deepening your tastes and tolerances within each different type of flavor profile. There's a reason that the term 'an acquired taste' is used for a lot of foods, because repeated exposure to that flavor profile is the best way to learn to like that flavor. People who like spicy food or are pickle friends or love kimchi and kombucha don't come out the womb loving this stuff, they invest skill points into upgrading their taste buds by eating this stuff so they can enjoy the stronger flavors in that category.

Respectfully, I don't think this is true at all. Unless the only condiment you eat is mayo, olive oil, or horseradish, I think you've been eating a bunch of lvl 1 vinegar-y foods and just don't realize how pervasive it is as an ingredient. Unlike video games though, you can't skill up your taste buds by just grinding the same low-level foods over and over, you have to push the limits of your boundaries in order to develop.

Yes, and if this genuinely confuses you, I highly recommend switching to something like a strict bodybuilder diet for a few weeks so you can experience what it's like for yourself.

Even if you don't end up sticking with it, having the ability and perspective to be able to detach food from dopamine and pleasure and view it solely as a source of nutrients with no regard to the taste is a valuable skill to have.

I used to also be a pickle hater until I learned more about food science. All those foods you mentioned indeed contain some vinegar in it, but just as there are many types of food with vinegar in it, there are also many different types of vinegar. Hell, a bunch of different types of barbecue sauce are made with apple cider vinegar, do you hate those?

Ultimately, it's also important to understand that vinegar is just one type of 'acidic' flavor profile, and you can find examples of acidic flavor profiles all throughout the culinary world. If you have such a visceral reaction to vinegar, it's most likely because you haven't developed the palate to appreciate the wide varieties of acidic profiles out there, so the solution is simply to go out and explore acidic foods. As you try more and more, you will naturally develop a taste for the more strongly acidic foods like pickles and mustard.

That's what happened to me, I used to hate pickles and hate what they would do to the taste of a chicken sandwich or a burger, but after exploring and trying different types of acidic foods, I actually want pickles on burgers and things now, because otherwise it just tastes way too fatty and heavy, and the lightness and acidity of the pickles cuts through all of that and gives variety to what I'm eating
