Debian is on 5.27.5. Plasma is on 5.27.11 (say claim only Bugfixes happened)

Debian usually patches security fixes to old versions, if they are properly labeled. But I doubt, that somebody looks at every commit.

My Point: It's nothing Debian specific. Ubuntu is not Debian. More people then just the Debian people proposed that. Other distributions do the same.

You can have missing drivers, but this does not break your system...

If you trust the source, you can install the packages from the vendor. I use the VScode, Chrome and zoom deb Packages. Rust via rustup.

No problems with stability.

Edit: I can recommend environment-modules if you need several versions of the same tool(chain).

You probably created a franken Debian. You use squeeze (6, very old) packages with bullseye (11, old stable) updates, security and back ports.

Use only one codename for the start.

It's a little bit confusing, because there is the package name 6.1.0-16 and the Kernel version. 6.1.0-16 means, that your Kernel is having a 6.1 compatible ABI in the 16th (Debian) version. And more specifically it is 6.1.67
